Avocado with spicy sauce & crispy bacon

-  All levels

Ingredients:

> 1 red pepper, seeded
> 1 green pepper, seeded
> 2 onions, peeled
> 2 peeled tomatoes
> 1 jalapeno pepper
> 1-2 garlic cloves
> 50 ml olive oil
> 50 ml white wine vinegar
> Couple of bacon strips
> 3-4 avocados
> Lemon

 

Directions:

1 | Mix the first 5 ingredients in a blender.

2 | Heat the olive oil and add the above mixture.

3 | Once it starts cooking add the vinegar and reduce until the sauce is chunky without water..

| Season with salt & pepper.

Cool.

| Fry the bacon in a pan until brown and crispy.

Remove to cool on paper towels to absorb excess fat.

Break the bacon into small bits.

 

On the plate: Cut the avocados into slices and place them on a long plate. Squeeze a few drops of lemon juice over them. Pour the sauce in the middle of the slices to form a line. Sprinkle with the bacon bits. Enjoy your meal!

In verrines (small glasses): Cut the avocados into cubes. Squeeze a few drops of lemon juice over them. Arrange the cubes in the verrines. Pour some sauce over the avocado cubes. Add a bit of sauce and sprinkle with the bacon bits. Enjoy your meal!
