BASIC SAUCE FROM BALI

 2 portions  All levels

Ingredients:

> 2 red hot chilies
> 4cm ginger
> 2cm fresh turmeric
> 2cm galangal
> 2 small shallots
> 3 garlic cloves
½ tsp coriander seeds
½ tsp white pepper
½ tsp black pepper
1 lemon grass stalk
1 bay leaf
coconut oil for frying

Directions:

1 | Grind all ingredients until smooth, except the bay leaf.

| Sauté until half cooked and add the bay leaf.

Use immediately with: Tofu or vegetable curry, Steamed fish, Fish skewer, Sweet fried tempe, Chicken mushroom soup.

Or transfer to an airtight container and store it in the fridge up to 2 weeks.
