CHOCOLATE BEETROOT BROWNIES

> 140 g cooked beets, peeled and finely grated
1 | Melt the chocolate in a bain-marie with the olive oil.
2 | Beat the eggs, sugar and vanilla.
3 | Add the melted chocolate, then the flour and the sifted cocoa.
4 | Mix well and add the beets.
5 | Place in rectangular or square pan lined with parchment paper.
6 |Bake in a preheated oven at 180C for 25 minutes (the brownies should remain soft).
