CHILI CON CARNE

Serves 8  All levels

Ingredients:

> 800 gr minced beef
> 150 gr dry red kidney beans, soaked and cooked according to the instructions on the package (or 1 can)
> 2 red bell peppers, chopped
> 1 large onion, chopped
> 2 garlic cloves, minced
> 2 tbsp tomato paste
> 400 gr chopped tomatoes from a can
> 100 ml red wine
> 250 ml beef stock
> 3 tsp cumin powder
> 1 tsp chili powder
> 3 tsp dried oregano
> 1 tsp salt
> Olive oil

Garnish:

> Sour cream (1 tsp per plate)
> Shredded cheese (1 tsp per plate)
> Chopped chives

Directions:

1 | Heat the olive oil in a large pan.

2 | Add the onions, garlic and peppers and sauté for a few minutes.

3 | Add the meat and stir until it changes color.

4 | Add the spices, the tomato paste, the tomatoes and the red wine and stir.

5 | Cook on low for approximately 30 minutes.

6 | Add the red kidney beans and cook for 5 more minutes. Adjust the flavor according to your taste.

7 | Serve with white rice topped with some shredded cheddar cheese, sour cream and chives.
