CRANBERRY ORANGE MARMELADE

Makes approximately 750ml  All levels

Ingredients:

> 250 ml freshly squeezed orange juice
> 2 organic oranges
> 125 ml red wine
> 1 package of fresh cranberries (350gr), washed
> 200 gr sugar

Directions:

1 | Using a vegetable peeler peel the 2 oranges.

2 | Cut the skin in match size strips.

3 | Cut out segments between the membranes of the oranges and reserve.

4 | Bring orange juice, wine and sugar to a boil and simmer until the sugar dissolves.

5 | Add the cranberries, the orange peel and the orange segments and simmer until the mixture thickens, approximately 15-25minutes, stirring occasionally.

6 | The mixture should be the consistency of a marmalade.

7 | Transfer to clean jars (that have been sterilized with boiling water), close with lids and turn the jars over to let the air out. Once cool you can store for several months in a cool place. Once you open a jar, keep in the fridge.

Serve with turkey.
