CHOCOLATE CHIP & MACADAMIA NUT COOKIES

Serves: approximately 12 large cookies  All levels

Ingredients :

> 115 g (1/2 cup) butter, softened at room temperature
> 50 g (1/4 cup) coconut sugar
> 150 g (3/4 cup) light brown sugar
> 1 egg
> 1 tsp vanilla extract
> 3/4 tsp baking soda
> 1/2 tsp saltl
> 220 g (3/4 cup) all-purpose flour
> 150 g dark chocolate chopped into bite-size chunks
> 100 g (3/4 cup) chopped macadamia nuts
> Fleur de sel for sprinkling

Directions:

1 | Preheat the oven to 180 C and line a baking tray with parchment paper.

2 | Mix together the butter and 2 sugars for a few minutes.

3 | Beat in the vanilla extract and egg, mix until smooth.

| Stir in the baking soda and salt.

| Add the flour in batches rather than all at once, combine.

| Fold in the chocolate chunks and nuts with a spatula until well-distributed throughout the batter.

| Place small rough balls of dough onto the prepared sheet (approx. 2 tbsp).

| Bake for 10-12 minutes (until the chocolate has melted, the cookies are slightly golden brown).

| Take out of the oven and sprinkle with the fleur de sel and enjoy!
