Beef tenderloin & celery root curry 

Serves 6  All levels

Ingredients:

> 1 kg beef tenderloin, cut into strips
> 1 large celery root, shredded
> 1 glass of vegetable or beef broth
> 200 ml cream (I use “demi-crème)e
> 2-3 tbsp curry powder (I use a mix of both mild & hot)
> Salt & pepper
> Olive or colza oil

Direction:

1 | Heat some oil in a frying pan and fry the beef until cooked through, a few minutes (don’t overcook it or it will become hard). Season with salt & pepper.

2 | Remove from the pan.

3 | Dry the pan with a paper towel.

4 | Add some oil to the pan and then add the celery root and dry curry. Stir until all the celery is coated.

5 | Cook for 1-2 minutes.

6 | Add the broth and let simmer another few minutes.

7 | Add the beef and stir.

8 | Add the cream and season to taste with salt & pepper.

9 | Serve with white rice. Enjoy!
