TOFU CURRY FROM BALI

 2-3 persons  All levels

Ingredients:

> 2 pcs of tofu
> 1 carrot cut in slices
> 50 gr fresh long beans cut in 2cm pieces
> 3 tbsp basic sauce
> ½ tsp salt and pepper
> ¼ tsp cumin
1 tbsp sugar
> 3 tbsp coconut milk
> 1 tbsp fried shallots
> 1 tsp fresh celery leaves (or fresh cilantro)
> ¼l chicken or vegetable stock
> Coconut oil for frying

Direction:

 

1 | Cut the tofu into cubes and fry it until golden brown in the coconut oil.

| Remove and dry from the oil and set aside.

| Heat the coconut oil in the frying pan, add the basic sauce and sauté for 2 minutes over low heat.

| Add the fried tofu, the long beans, the carrot slices and keep stirring.

| Add the stock, the cumin and the coconut milk and bring to a boil.

| Simmer for 5 minutes.

| Season with salt and pepper.

| Sprinkle with the fried shallots and celery (or cilantro) for garnishing.

› Serve with basmati rice.
