CHICKEN BREAST WITH MUSTARD AND TARRAGON

Serves 4  All levels

Ingredients:

> 800 gr chicken breast, cut into thin strips
> 3 tbsp Dijon mustard
> 250 ml demi-crème
> 15 gr fresh tarragon (otherwise dried), chopped
> Salt & pepper
> Rapeseed oil

Directions:

1 | Heat a little rapeseed oil in a frying pan.

2 | Sauté the chicken until it is cooked through. Salt the meat during cooking.

3 | Set aside.

4 | On the same pan add the mustard and stir for a few seconds.

5 | Add the demi-crème and mix until the sauce is smooth.

| Add pepper.

| Return the chicken to the sauce.

| Adjust the seasoning and add the tarragon. Mix and serve with spaëtlis, rice or pasta and a seasonal vegetable of your choice.
