CHICKEN WITH SHIITAKE MUSHROOMS AND CURRY |

Ingredients:
> 600 gr chicken breast, cut into small pieces |

1 | Heat 1 tbsp of olive olive in a frying pan or wok and sauté the chicken breast. Once tender remove from the pan and set aside. 2 | In the same pan, heat the remaining olive oil. 3 | Sauté the shiitake mushrooms for a few minutes. 4 | Add the spring onions and sauté for another few minutes. 5 | Add the tomatoes, white wine and curry powder and cook for a few minutes. 6 | Add the cream and stir. 7 | Add the chicken and stir. 8 | Season with salt and pepper. 9 | Remove from the heat and sprinkle with the basil leaves. |
