CHICKEN WITH SHIITAKE MUSHROOMS AND CURRY

 4 persons  All levels

Ingredients:

> 600 gr chicken breast, cut into small pieces
> 200 gr de shiitake mushrooms, cut into thin strips
> 4 tomatoes, peeled and diced
> 4 spring onions, cut diagonally into 3-4cm pieces
> 10-15 basil leaves, cut into thin strips
> 2 tbsp curry powder
> 100 ml white wine
125 ml cream
2 tbsp olive oil
Salt, pepper

Direction

1 | Heat 1 tbsp of olive olive in a frying pan or wok and sauté the chicken breast. Once tender remove from the pan and set aside.

2 | In the same pan, heat the remaining olive oil.

3 | Sauté the shiitake mushrooms for a few minutes.

4 | Add the spring onions and sauté for another few minutes.

5 | Add the tomatoes, white wine and curry powder and cook for a few minutes.

6 | Add the cream and stir.

Add the chicken and stir.

Season with salt and pepper.

Remove from the heat and sprinkle with the basil leaves.

Serve with homemade spätzli or white rice.
