PUMPKIN SPICE APPLE & OATS

Serves 2  All levels

Ingredients:

> 1 apple, spiralized or grated
> 3 tbsp rolled oats
> 1 tsp coconut oil
> Pumpkin spice according to taste (1.5 tsp cinnamon, 1 tsp ginger powder, ½ tsp nutmeg, ¼ tsp ground cloves)
Boiling water
> 1 tbsp almond cream (or any other nut)
> ½ tsp maple syrup

 

Directions:

1 | Heat the coconut oil in a frying pan.

2 | Add the rolled oats and fry a few minutes on high until lightly toasted.

3 | Cover with a little bit of boiling water (just to coat).

| When the water is absorbed by the oats (a few seconds), add the apple and the pumpkin spice.

| Stir a minute or two (until the apple softens).

| Transfer to a bowl.

7 | Top with the almond cream and the maple syrup and a fresh fruit of your choice.
