FUSILLI WITH HOMEMADE PESTO, CHERRY TOMATOES AND BURRATA

Serves: 4  All levels

For the pesto:

> 2 bunches of fresh basil
> 2 garlic cloves
> 2-3 tbsp roasted pine nuts
> 2 tbsp grated Parmesan cheese
> Salt, pepper
> Olive oil (according to the consistency you like)

Ingredients:

400 gr fusilli, cooked according to the instructions on the package
300 gr cherry tomatoes, cut into 4
4 small burrata piccola (or 2 large ones), cut in quarters
A few basil leaves, chopped
Grated Parmesan cheese

Directions:

1 | Mix all of the pesto ingredients in a blender.

2 | Drain the pasta.

3 | Add the pesto, tomatoes and mix everything gently together.

| Season to taste and serve in pasta plates.

Arrange the burrata quarters on top of the pasta in each plate.

| Decorate with the chopped basil leaves and sprinkle with some grated Parmesan cheese.

> We eat them with a few drops of homemade chili pepper oil. Enjoy your meal!
