AVOCADO AND CUCUMBER GAZPACHO

5-6 persons  All levels

Ingredients:

> 3 avocado
> 1 cucumber peeled
> 6 springs onions, chopped
> 1/2 l chicken or vegetable broth 
> 200 ml greek yogurt
> 2 garlic cloves
> 2 tbsp fresh mint leaves 
> 2 tbsp fresh coriender 
> 
Juice of 1/2 lime
> 1/2 tsp piment d'espelette
> Salt, pepper to taste

Directions:

| Put all the ingredients in a blender apart from the broth.  

| Add the broth little until you reach a desired, smooth and creamy consistency. 

| Season to taste with salt, pepper and the piment d'Espelette according to taste. 

| Refrigirate for at least 1 hour. 

| Top with a little bit of Greek yogurt, a lime slice and some chopped coriander leaves or Spring onions.
