BREAD GNOCCHI BY NOMAD SPICE

Serves 4  All level

Ingredients:

> 200 g stale bread
> 15 cl of water
> 80 g flour
> Chopped parsley
> Nutmeg (optional)
> 20 g grated parmesan
> 1 egg
> Salt

Preparation of the recipe:

1 | Cut the bread into cubes. Put it in a bowl and add 15 cl of water. Soak 20 min. until the bread softens.

2 | Chop the bread crust.

3 | Press the bread to remove the excess water.

| Add the flour, parmesan, egg, parsley, nutmeg and salt. Mix with a fork until you get a soft paste.

| Flour a work surface and form sausages 5 cm in diameter.

| Wrap in a tightly wrapped cling film and place in the fridge for 30 minutes.

| Cut 2 cm pieces and cook the gnocchi in boiling salted water.

| When the gnocchi rise to the surface it means they are cooked.

Drain and serve on a deep plate with the sauce of your choice.
