ZUCCHINI AND WILD GARLIC GRATIN

Ingredients:

> 6 grated zucchini
> 1 onion
> 180 g feta cheese
1 tbsp olive oil
A few black olives
Fresh thyme
> 8-10 tablespoons of wild garlic pesto, according to your taste
> Salt and pepper

Directions:

1 | Preheat oven to 180°C (turning heat).

2 | Deglaze the grated zucchini with salt.

| Heat the olive oil in a frying pan and sear the onion over medium heat without browning it.

| Drain the zucchini and add them to the onions and sear.

| Add the thyme leaves and the pesto. Add pepper and mix well.

| Transfer to an ovenproof container.

| Add the feta cheese cut into small pieces.

| Add the olives.

| Bake in the oven for 30-40 minutes until nicely colored.

You can also put this mixture on a puff pastry to make a pie.
