HERRING IN OIL AND ONION (SLEDZIE)

Makes a 500 g jar  All levels

Ingredients:

> 400 g of herring fillets "matjes”
> 3-4 large onions, chopped
> Freshly ground pepper
> Lemon juice
> Rapeseed or grape seed oil (oil must be neutral)

Directions:

1 | Rinse the herring in cold water.

2 | Cut them into 2cm long pieces.

3 | Put the herring fillets in a jar, alternating them with the onions, oil, pepper and lemon juice. Keep in the refrigerator for at least 12 hours.

4 |  Serve the marinated herring on a slice of good bread covered with the onion mixture.
