3 CHEESE LASAGNA

1 large baking pan (mine is 30 X 42 cm)  All levels

Ingredients:

 Bolognese sauce
> 400-500 gr lasagna pasta (fresh pasta is best, e.g. homemade or store bought)
> 250 g ricotta cheese
> 300 gr grated mozzarella
> 150 gr grated parmesan cheese
> 1 egg
> 1 clove of garlic, pressed
> 200 g spinach leaves, steamed and chopped
> Salt and pepper

Directions:

1 | Preheat oven to 180C.

| Prepare the Bolognese sauce.

3 | Mix in a bowl the ricotta, 200 gr of mozzarella, 75 gr of parmesan, the egg, the garlic, the spinach and season with salt and pepper.

| Start to make layers in the following order in the pan: a little bit of the Bolognese sauce, a layer of pasta, Bolognese sauce, pasta, cheese/spinach filling, pasta, Bolognese sauce...

At top you should finish with the Bolognese sauce and sprinkle it with the rest of the mozzarella and the parmesan cheese.

Cover with aluminum foil.

Put in the oven and cook for 45 minutes.
