MUSSELS IN SPICY TOMATO SAUCE

 Serves 3-4   All levels

ingredients:

> 2 kg fresh mussels, well washed
> 2 small onions, minced
> 400 gr canned tomatoes
> Pinch of sugar
> 2 garlic cloves, pressed
> 150 ml dry white wine
> 1 tsp Italian seasoning with chili flakes
> 2 tbsp olive oil
> Fresh parsley, chopped
> Salt & pepper

Directions:

1 | Prepare the sauce.

2 | Heat the olive oil a large, tall cooking pan.

3 | Add the onions and garlic and stir until translucent (make sure not to burn them).

4 | Add the white wine and reduce by half.

5 | Add the tomatoes, the sugar, the spices and season to taste with salt and pepper. Let simmer for a few minutes.

6 | Once the sauce is done and on medium high heat, add the mussels and cover with a lid.

Cook until the mussels open (approximately 5&mdash10 minutes). Turn off the heat.

Add the parsley and serve with a fresh baguette (great for dipping it in the sauce), fries or over cooked pasta.

Enjoy!
Do not the mussels that have not opened.
