TERIYAKI SALMON SOBA NOODLES

 Serves 4  All levels

Ingredients:

> 250 gr soba noodles
> 200 gr fresh salmon without skin, cut into cubes
> 1 broccoli head, separated into small florets
> 1 red onion, sliced lengthwise
> Neutral oil such as rapeseed or peanut oil
> Roasted sesame seeds

For the teriyaki sauce:

> 60 ml (1/4 cup) soya sauce
> 60 ml (1/4 cup) water
> 1 garlic clove, minced
> 1 cm of fresh ginger, chopped
> 1 tbsp rice vinegar
> 1 tsp honey
> 1 tsp arrowroot flour

Directions:

1 | Prepare the teriyaki sauce.

| Heat a little bit of oil. Add the garlic and ginger..

| After a few seconds add the rest of the ingredients apart from the arrowroot flour. Let it simmer for a few minutes adjusting to taste with more honey or vinegar.

| In a small bowl or cup dissolve the arrowroot flour in a little bit of water.

| Add to the sauce and cook for a 1-2 min until the sauce thickens. Set aside.

| Cook the soba noodles according to the instructions on the package.

| Steam the broccoli florets approximately 7-10 minutes (depending on their size).

| In a frying pan heat some oil.

| Add the onions and let them soften for a minute or 2.

10 | Add the salmon cubes and cook until the salmon changes color (a few minutes).

11 | Pour the teriyaki sauce into the pan.

12 | Serve the soba noodles in a bowl, followed by the teriyaki salmon and the broccoli. Sprinkle with the roasted sesame seeds.

 Optional: You can add a fresh chili pepper to make it spicy. Works also great with chicken, other meat or shrimp as well as adding any vegetable of your choice.
