GINGERBREAD BY CHRISTOPHER LOEFFEL

1 cake loafstrong   All levels

Ingredients:

> 300 g water
> 300 g honey
> 140 g sugar
> 14 g lemon zest
> 14 g orange peel
> 2 g salt
> 8 g star anise
> 5 g all-spice
> 6 g cinnamon
> 300 g flour
> 20 g baking powder
> 192 g butter

Directions:

1 | Preheat your oven to 170°C.

2 | In a bowl mix the flour with the baking powder.

3 | Heat the water, with the sugar, the zest, salt and the spices.

| Add the honey and butter, once completely melted add the mixture of flour and baking powder.

Mix well with a whisk.

| Grease your loaf pan, line it with parchment paper and pour in the gingerbread mixture.

Bake for about 50 minutes.
