BANANA SOURDOUGH DISCARD PANCAKES

Makes 4 pancakes   All levels

Ingredients:

> 4 tbsp sourdough discard
> 1 ripe banana, smashed with a fork
> Pinch of baking soda
> ¼ tsp pumpkin spice
> 1 tsp coconut oil
> Maple syrup
> Lime zest

Directions:

1 | In a bowl mix the sourdough discard, the banana ^, the baking soda and the pumpkin spice.

2 | Heat the coconut oil in a frying pan.

3 | With a tablespoon dispose the pancake mix onto the pan (you should have about 4 pancakes).

| Once you see bubbles on the surface of the pancakes, turn them over (the side that was fried should be golden brown).

Fry 1-2 more minutes.

| Serve with lime zest and some maple syrup. You can also top them with some seasonal fruit of your choice.
