2 SALMON PASTA

Serves 4-6  All levels

Ingredients:

> 500 gr of pasta
> 1 large package of smoked salmon
> 1 piece of fresh salmon (about 200gr)
> 1 red onion
> 4 tbsp capers, drained
> 200 ml half & half
> 100 ml of white wine
10gr fresh dill, minced
> Olive oil
> Pepper
> Grated parmesan

Directions:

1 | Cook the pasta in salted water according to the instructions on the package.

2 | Cut the salmon into small pieces.

3 | Mince the red onion.

| Heat the pan with 1 tablespoon of olive oil.

Sauté the onions.

| Add the salmon and mix for a few minutes until the salmon changes color.

Pour the white wine into the pan and cook until the wine is reduced by half.

Add the capers.

Add cream and cook a few more minutes.

10 Turn of the stove and add the dill and a lot of fresh pepper.

11 Drain the pasta.

12 Mix the sauce with the pasta.

 Serve with grated Parmesan to taste.
