Ingredients:
> 75 g flour 00 (to be found in an Italian deli) Natural coloring:
> Black | ½ cc of cuttlefish ink or 1 cc of activated charcoal |

1 | Mix all the dry ingredients in the bowl of a robot. 2 | Stir in all the liquid ingredients. 3 | Work the dough at medium speed for 5 minutes or until a smooth dough is obtained. 4 | Let the dough rest for one hour in plastic wrap. 5 | Flatten the dough with a rolling pin before placing it in the pasta machine. 6 | Pass the dough through the dough machine by changing the thickness gradually from the largest to the finest until a fine rectangular dough of one millimeter is obtained. 7 | You can now give the dough the desired shape (tagliatelle, spaghetti ...). |
