FRESH PASTA

 for 100 g  All levels

Ingredients:

> 75 g flour 00 (to be found in an Italian deli)
> 25 g normal flour
> 1 big egg (min 60gr)
> 1 pinch of salt
> 1 tablespoon of olive oil

Natural coloring:

> Black | ½ cc of cuttlefish ink or 1 cc of activated charcoal
> Green | ½ cc of matcha
> Blue | ½ cc of blue-butterfly pea flower powder
> Rouge | 1 tablespoon of beet powder
> Rose | 1 cc of pittaya powder
> Mauve | 1 cc of goji seed powder
> Yellow | ½ cc of saffron powder
> Orange | 1 cc of paprika

Direction:

1 | Mix all the dry ingredients in the bowl of a robot.

2 | Stir in all the liquid ingredients.

3 | Work the dough at medium speed for 5 minutes or until a smooth dough is obtained.

4 | Let the dough rest for one hour in plastic wrap.

5 | Flatten the dough with a rolling pin before placing it in the pasta machine.

6 | Pass the dough through the dough machine by changing the thickness gradually from the largest to the finest until a fine rectangular dough of one millimeter is obtained.

You can now give the dough the desired shape (tagliatelle, spaghetti ...).

Ingredients for candy pasta stuffing:

> 4 tablespoons of ricotta
> 4 tablespoons grated Parmesan cheese
> 1 cc chopped fresh basil
> Salt and pepper

Material :

> Robot mélangeur
> Machine à pâtes
> Formes, spatule, cuillère à soupe et à café

Direction :
1 | Mix all ingredients well and transfer to a pastry bag.
