Tuna tomato penne with lemon zest
|
Serves 4-5 All levels
|

|
Ingredients:
> 1 can of tuna in water, drained
> 1 can of organic tomato sauce (or crushed tomatoes)
> 1 onion, chopped
> Italian seasoning
> 1 tsp sugar
> Salt & pepper
> 500 gr of penne (or any other pasta of your choice)
> Zest of 1 lemon
> Olive oile

Directions:

1 | Cook the pasta according to the instructions on the package.
2 | Heat the olive oil in a pan and fry the onion until tender.
3 | Add the drained tuna and stir a few minutes.
4 | Add the canned tomatoes (or sauce), the sugar and the Italian seasoning. Cook for a few minutes. Turn off the heat.
5 | Add the lemon zest and sprinkle with fresh parsley (optional).
6 | Serve over the cooked pasta.
> This sauce is also great in crepes alone or with wilted spinach.
