OVEN ROASTED LEMON & THYME TURKEY BREAST

-   All levels

Ingredients:

> 1 turkey breast (min was approx 2.6kg)
> 1 garlic head cut in half
> 1 lemon cut into several thick slices
> Fresh thyme sprigs
> 300 ml white wine
> Butter
> Salt & pepper

Directions:

1 | Rub the meat with the salt and pepper. Cover with butter.

2 | Transfer to a roasting pan. Pour the white wine into the pan.

3 | Place the garlic, lemons and thyme springs around/on the meat and bake in a preheated oven (180C) for approximately 1.5-2hrs.

| Baste the turkey every 15-20min with the butter/wine mixture.

The thickest part of the turkey breast should be at 73C when finished.

Take out of the oven, cover with foil and let rest for 10min before slicing.
