Pulled pork

Serves 8-10  All levels

Ingredients for the Marinade:

> 3 tbsp smoked paprika
> 1 tbsp garlic powder
> 1 tbsp brown sugar
> 1 tbsp mustard seeds
> 3 tsp fleur de sel
> 2 tbsp olive oil
> 1 2-2.5kg pork shoulder

Direction for the Marinade:

1 | Mix all the ingredients together.

2 | Rub the meat with it and marinate overnight (or at least a couple of hours)..

Ingredients for the Sauce:

> Vegetable oil
> 240 ml homemade bbq sauce (as per below recipe)
> 120 ml apple cider vinegar
> 120 ml beer (or chicken stock)
> 1 tbsp Worcestershire sauce
> 1 large onion, chopped
> 2 garlic cloves, crushed
> 1-2 thyme sprigs (or 1 ½ tsp dried thyme)

Direction for the Sauce:

1 | Heat the oven to 150 C.

2 | Sauté the meat on all sides in the vegetable oil in a frying pan.

| Transfer the meat to a baking pan.

| Add the onions, garlic, bbq sauce, apple cider vinegar, beer and thyme.

| Cover with aluminum foil and cook for approximately 5-6 hrs in the oven.

| The meat will be cooked when it will easily shred with 2 forks.

| Shred the meat and serve with the bbq sauce in heated hamburger buns or pita bread and some cole slaw on the side.

| Enjoy!

| Optional: You can also cook the meat in a slow cooker on high for 5hrs.

Ingredients for  Barbecue Sauce:

> 10 tbsp ketchup
> 5 tbsp apple cider vinegar
> 4 tsp smoked paprika
> 1 tsp cayenne pepper
> 2 tsp barley malt (or any other sweetener like brown sugar or maple syrup)

Direction for Barbecue Sauce:
1 | Mix all the ingredients together and set aside.
