Bean veggie quesadillas with homemade guacamole
|Serves 4-6 All levels|
> 6 flour tortillas
Ingredients For the filling:
> 1 can kidney beans (or any other beans of your choice)
Ingredients for Guacamole:
> 2 ripe avocados, mashed with a fork
1 | Prepare the guacamole by mixing all ingredients with a fork. Chill.
2 | 2. Heat the olive oil in a frying pan.
3 | Sauté the fresh vegetables until tender.
4 | Season with the spices.
5 | Add the kidney beans cook until warm and coated with the spices.
6 | Season to taste.
7 | Butter the quesadillas on one side and turn over.
8 | Sprinkle the shredded cheese on half of the tortilla and top the cheese with the bean/veggie mixture. Fold over. Repeat for the remaining tortillas.
9 | Preheat a clean, dry frying pan on medium/high.
10 | 1Place the tortillas in the pan (depending on the size of the pan, you’ll be able to put 1-2). Cover with a lid and cook for a few minutes until crispy and golden brown. Turnover and do the same on the other side.vee 11 | Cut into 3 triangles and serve with some guacamole and salsa. Enjoy!.
› OPTION: You can make the same recipe by substituting the beans with either chicken breast or shrimp or just the vegetables.
