Bean veggie quesadillas with homemade guacamole

Serves 4-6  All levels


> 6 flour tortillas
Shredded Mozzarella
> 1 jar of salsa
> Butter

Ingredients For the filling:

> 1 can kidney beans (or any other beans of your choice)
> 1 bell pepper, sliced into thin strips
> 1 onion, sliced lengthwise
> 4-6 mushrooms, sliced
1 chili pepper, sliced (I leave the seeds)
1 garlic clove, minced
1 tsp cumin
1 tsp smoked paprika
1 tsp chili powder
1 tsp dried oregano
> Salt & pepper to taste
> Olive oil

Ingredients for Guacamole:

> 2 ripe avocados, mashed with a fork
>1 small red onion, minced
> 1 chili pepper, slicedé
> Bunch of fresh chopped coriander
> Juice of 1 lime
> ½ package of guacamole spice

Directions :

1 | Prepare the guacamole by mixing all ingredients with a fork. Chill.

2 | 2. Heat the olive oil in a frying pan.

3 | Sauté the fresh vegetables until tender.

| Season with the spices.

| Add the kidney beans cook until warm and coated with the spices.

| Season to taste.

| Butter the quesadillas on one side and turn over.

| Sprinkle the shredded cheese on half of the tortilla and top the cheese with the bean/veggie mixture. Fold over. Repeat for the remaining tortillas.

| Preheat a clean, dry frying pan on medium/high.

10 | 1Place the tortillas in the pan (depending on the size of the pan, you’ll be able to put 1-2). Cover with a lid and cook for a few minutes until crispy and golden brown. Turnover and do the same on the other side.vee 11 | Cut into 3 triangles and serve with some guacamole and salsa. Enjoy!.

› OPTION: You can make the same recipe by substituting the beans with either chicken breast or shrimp or just the vegetables.
