CAESER SALAD WITH GRILLED CHICKEN

Serves 4 as main dish All levels

Ingredients:

> 4 chicken breasts, seasoned to your liking
> 800 gr Romain lettuce, washed and cut into small pieces
> Parmesan cheese

For the dressing:

> 6 anchovy filets
1 garlic clove
3 tsp capers
1.5 tsp Worcestershire sauce
1.5 tbsp white vinegar (wine or apple)
1.5 tbsp Dijon mustard
6 tbsp olive oil
> 3 tbsp mayonnaise
> 3 tbsp sparkling water
> Salt & pepper to taste

Directions:

1 | Grill the chicken breast on a bbq or in a frying pan until cooked through (approximately 10-15min, depending on their thickness).

2 | Put all the dressing ingredients in a food processor or blender and blend until smooth. Adjust the seasoning with salt and pepper.

| Mix the Romain lettuce with the dressing in large bowl.

| Cut the chicken into thin strips.

| Arrange on each plate: the lettuce topped with the chicken breast strips and sprinkled with some fresh grated Parmesan and fresh pepper.
