Roasted eggplant & cauliflower feta salad with sun dried tomato peanut sauce |

Ingredients:
> 3 small eggplant, roasted

Directions: | |
1 | 1. Wash the veggies and cut them to your liking. 2 | 2. Season with garlic powder, salt & pepper and drizzle with olive oil. 3 | 3. Roast at 180C for 25 minutes. |

Sun dried tomato & peanut sauce sauce: | |
Ingredients :
> 5-6 sun dried tomatoes |

1 | Put all of the ingredients in a food processor and blend until smooth. 2 | Adjust thickness with water. 3 | Season with salt & pepper to your taste. |

› Arrange the vegetables on a plate. Sprinkle with some feta cheese and drizzle with the sauce. Enjoy! |
