Roasted eggplant & cauliflower feta salad with sun dried tomato peanut sauce

Serves 4  All levels

Ingredients:

> 3 small eggplant, roasted
> 1 large cauliflower, roasted
> Feta cheese

 

Directions:

1 | 1. Wash the veggies and cut them to your liking.

2 | 2. Season with garlic powder, salt & pepper and drizzle with olive oil.

3 | 3. Roast at 180C for 25 minutes. 

Sun dried tomato & peanut sauce sauce:

Ingredients :

> 5-6 sun dried tomatoes
> 1 garlic clove
> Juice of 1 lime
> Handful of roasted unsalted peanuts
> 1 tbsp tahini
> 1 tbsp maple syrup
> 1 small chili pepper
> Olive oil
> Water
> Salt & pepper

1 | Put all of the ingredients in a food processor and blend until smooth.

2 | Adjust thickness with water.

3 | Season with salt & pepper to your taste.

Arrange the vegetables on a plate. Sprinkle with some feta cheese and drizzle with the sauce. Enjoy!
