Ingredients:
> 1 large (or 2 small) eggplant, cut in circles seasoned & grilled (or pan fried) Ingredients for the vinaigrette :
> 2 tbsp olive oil |

1 | Mix all of the sauce ingredients in a small bowl. 2 | Arrange the grilled eggplant slices on 2 places.. 3 | Place one slice of tomato on each eggplant slice. 4 | Crumble the feta on top of each plate. 5 | Drizzle with the dressing. |
