GRILLED EGGPLANT SALAD WITH A CAPER ANCHOVY VINAIGRETTE

Serves 2 as a main dish  All levels

Ingredients:

> 1 large (or 2 small) eggplant, cut in circles seasoned & grilled (or pan fried)
> 2 tomatoes, cut in slices
> ½ cube of feta

Ingredients for the vinaigrette :

> 2 tbsp olive oil
> 1 tbsp chili oil
> Juice of ½ lemon½
> 1 cs capers, chopped
> 1 anchovy filet, chopped
> 1 tbsp fresh oregano, chopped
> ½ tbsp fresh thyme, chopped
> 1 garlic clove, minced
Salt & pepper

Directions:

1 | Mix all of the sauce ingredients in a small bowl.

2 |  Arrange the grilled eggplant slices on 2 places..

3 |  Place one slice of tomato on each eggplant slice.

|  Crumble the feta on top of each plate.

| Drizzle with the dressing.
