Serves 12 as a side dish  All levels


> 1 white cabbage, finely shredded
> 3 carrots, grated
> 1 red onion, thinly sliced
> 2 green onions (white and green parts), finely chopped
> 1 fresh red chili pepper, sliced
> 350 ml mayonnaise
> 80 ml Dijon mustard
> 1 tablespoon cider vinegar
> Juice of 1 lemon
> Several dashes of Tabasco
> Fleur de sel & freshly ground black pepper to taste


1 | Stir together the mayonnaise, mustard, vinegar, lemon juice, sugar and the hot sauce.

2 | In a large bowl, combine the cabbage, carrots, red onion, green onions, and chili pepper.

3 | Pour the dressing over the cabbage mixture and toss gently to mix.

| Season to taste with the fleur de sel and freshly ground pepper.

Chill for 2 hours in the refrigerator before serving.
