BUTTERNUT SQUASH, LENTILS AND HALLOUMI SALAD

Serves: 4  All levels

Ingrédients :

> 1 butternut squash
> 1 halloumi cheese
> 200gr green lentils
> 4-5 red onions
> 1 clove of garlic
1 lemon
> Tarragon, rosemary, chives, fresh
> Olive oil
> Salt & pepper

Préparation de la recette :

1 | Empty the squash and cut it into half-moon slices without removing the skin.

2 | Cut the onions in four.

3 | Mix the squash and onions with a little bit of olive oil, salt, pepper and the fresh rosemary.

| Transfer the vegetables to a baking sheet with parchment paper and bake for 25-30min at 220C.

| Cook the lentils in boiling salt-free water according to the instructions on the package.

| Mix them with olive oil and lemon juice. Add the fresh chopped herbs and the lemon zest. Season with salt and pepper.

| Grill the slices of halloumi in a pan with a little bit of olive oil.

 

Dress the plates with the lentils and put the vegetables and cheese on top. Enjoy!
