BUTTERNUT SQUASH, LENTILS AND HALLOUMI SALAD |

> 1 butternut squash |

1 | Empty the squash and cut it into half-moon slices without removing the skin. 2 | Cut the onions in four. 3 | Mix the squash and onions with a little bit of olive oil, salt, pepper and the fresh rosemary. 4 | Transfer the vegetables to a baking sheet with parchment paper and bake for 25-30min at 220C. 5 | Cook the lentils in boiling salt-free water according to the instructions on the package. 6 | Mix them with olive oil and lemon juice. Add the fresh chopped herbs and the lemon zest. Season with salt and pepper. 7 | Grill the slices of halloumi in a pan with a little bit of olive oil.
