Ingredients: > 800 gr a mix of fresh & frozen sweat peas |

1 | 1. Cook the frozen peas for 2 minutes in boiling water. 2 | 2. Cook the fresh peas for approximately 5-7 minutes in boiling water. 3 | 3. Remove the base and top of the lemon so it sits flat on the chopping board. 4 | 4. With a sharp knife remove the peel and white pith from the lemon. 5 | 5. Holding the lemon over a bowl to catch any juice, cut along either side of the white membrane to remove the segments. 6 | 6. Add all of the rest of the ingredients to the bowl and toss gently. |
