SWEAT PEA & FETA SALAD

Serves 4 as a side dish All levels

Ingredients:

> 800 gr a mix of fresh & frozen sweat peas
> 180 gr feta cheese, crumbled
> Zest & juice of 1 lemon
> 1 lemon
3 tbsp olive oil
2 tbsp fresh mint, chopped
2 tbsp fresh thyme, chopped
2 tbsp fresh chives, chopped
1 tsp chili oil
> Salt & pepper to taste

Directions:

1 | 1. Cook the frozen peas for 2 minutes in boiling water.

| 2. Cook the fresh peas for approximately 5-7 minutes in boiling water.

| 3. Remove the base and top of the lemon so it sits flat on the chopping board.

| 4. With a sharp knife remove the peel and white pith from the lemon.

| 5. Holding the lemon over a bowl to catch any juice, cut along either side of the white membrane to remove the segments.

| 6. Add all of the rest of the ingredients to the bowl and toss gently.

Serve as a side with white meat or fish or as a main meal.
