GREEN TOMATO SALSA

Makes approximately 1400ml of salsa  All levels

Ingredients:

1 kg green, unripe tomatoes, bigger ones cut in half or quarters
2 small onions, roughly chopped
3 garlic cloves, peeled
1 or 2 chili peppers, chopped
30 gr fresh cilantro, chopped
juice of 2 limes
2 tbsp rapeseed oil
1tsp salt
pepper to taste

Directions:

1 | Rinse the jars and lids with boiling water.

| Combine all ingredients except for the cilantro in a large saucepan.

| Bring to a boil.

| Reduce heat and simmer for 30-45 minutes (until the tomatoes are soft and are falling apart).

| Stir in the chopped cilantro and adjust taste with salt and pepper if necessary.

| Transfer to a blender and mix. If you don’t have a strong enough blender that will purify the tomatoes skins, sieve through a fine colander.

| Ladle the hot salsa into the clean jars.

Serve with Mexican food or warm with white fish.
