GREEN TOMATO SALSA
|Makes approximately 1400ml of salsa All levels|
> 1 kg green, unripe tomatoes, bigger ones cut in half or quarters
1 | Rinse the jars and lids with boiling water.
2 | Combine all ingredients except for the cilantro in a large saucepan.
3 | Bring to a boil.
4 | Reduce heat and simmer for 30-45 minutes (until the tomatoes are soft and are falling apart).
5 | Stir in the chopped cilantro and adjust taste with salt and pepper if necessary.
6 | Transfer to a blender and mix. If you don’t have a strong enough blender that will purify the tomatoes skins, sieve through a fine colander.
7 | Ladle the hot salsa into the clean jars.
> Serve with Mexican food or warm with white fish.
