BAKED 7 SPICE SALMON WITH A CREAMY MUSTARD SAUCE

 Serves 4  All levels

Ingredients:

> 600 gr fresh salmon filet, skinned
> 2 tsp olive oil
> 2 tsp “7 spices” mix 7 épices
> 1 shallot, chopped
> 200 ml half-and-half
> 3 tbsp mustard with grains
> 2 tbsp capers
> 2 tbsp fresh dill, chopped
> Salt & pepper

Directions:

1 | Heat oven to 180 C.

2 | Coat the bottom of the salmon with 1 tsp of olive oil.

3 | Sprinkle the top with the 7 spices mix.

4 | Put the salmon on a perforated rack in a baking pan with some water at the bottom (this will make the salmon super moist). If you don’t have such a rack, simply put the salmon on parchment paper on a baking sheet.

5 | Bake for 15 minutes.

6 | Now prepare the sauce.

Heat the reaming olive oil in a frying pan.

Add the chopped shallot and sauté until it becomes translucent.

Add the cream and the mustard. Stir and cook on medium for a few minutes.

10 Add the capers.

11 Season with salt and pepper.

12 Add the dill right before serving the fish.

13 Serve with a steamed seasonal vegetable.
