FRESH TOMATO BASIL SOUP

Serves 4  All levels

Ingredients:

> 2 kg ripe tomatoes*, chopped
> 2 onions, chopped
> 500 ml vegetable (or chicken) broth
> 20 gr fresh basil, tied together with a kitchen rope
> ½ tbsp sugar
> 3 tbsp balsamic vinegar
> 4 tbsp cream
> Olive oil
> Salt & fresh ground pepper

Directions:

1 | Heat a little bit of olive oil a large pan.

2 | Add the onions and sauté until they become soft.

| Add the tomatoes, basil, stock and sugar and cook for 20 minutes on low.

| Take out the basil leaves and discard.

| Transfer the soup to a blender and blend until smooth.

| Transfer back to the pan.

| Add the balsamic vinegar and cream.

Season with salt and fresh ground pepper.

 Serve with a piece of toasted bread (preferably sourdough).

 Enjoy!

*If your blender is not powerful enough to cream the tomatoes skins, then you need to peel them before cooking.
