FRESH TOMATO BASIL SOUP |

Ingredients:
> 2 kg ripe tomatoes*, chopped |
Directions: | |
1 | Heat a little bit of olive oil a large pan. 2 | Add the onions and sauté until they become soft. 3 | Add the tomatoes, basil, stock and sugar and cook for 20 minutes on low. 4 | Take out the basil leaves and discard. 5 | Transfer the soup to a blender and blend until smooth. 6 | Transfer back to the pan. 7 | Add the balsamic vinegar and cream. 8 | Season with salt and fresh ground pepper. |

› Serve with a piece of toasted bread (preferably sourdough). › Enjoy! *If your blender is not powerful enough to cream the tomatoes skins, then you need to peel them before cooking. |
