RED LENTIL SOUP

Serves 4 as main meal  All levels

Ingredients:

> 250 gr dry red lentils, soaked in cold water (maximum 30 minutes)
> 2 red bell peppers, chopped
> 2 carrots, chopped
> 1 leek (white part only), chopped
> ½ celery root, chopped
> 2 garlic cloves
> 2 tbsp olive oil
> 2 tsp sweet paprika
> 2 tsp curry powder
> 1 tsp turmeric powder
> ¼ tsp chili powder
> 750 ml chicken or vegetable stock
> 500 ml coconut milk

Directions:

1 | Heat olive oil in a large pan.

2 | Add all the vegetables and sauté for a few minutes.

| Add the lentils, the broth, the coconut milk and all the spices and let simmer for approximately 20-30min.

| 4. Transfer to a blender and mix until smooth as cream. Adjust flavor with salt.
