POLISH STYLE BEEF TARTAR

Serves 4  All levels

Ingredients:

> 720 gr of beef cut with a knife (tenderloin or entrecote)
> 4 egg yolks
> 6 tbsp rapeseed oil
> 6 tsp of Dijon mustard
> 6 tbsp finely chopped onions
> 6 tbsp chopped gherkins
> 6 tbsp finely chopped wild mushrooms in vinegar
> Salt & pepper
> A few drops of Tabasco

Directions:

1 | The traditional way of serving beef tartar in Poland is to put the meat on the plate, then place the chopped onion, pickles and mushrooms on the plate next to the meat and place the egg yolk on top of the meat.

2 | The rest of the ingredients you put on the table and each person seasons their tartar on their plate.

3 | It is eaten with spelt bread with butter. 

| Alternatively, you can mix all the ingredients in a bowl and then serve it on plates with good bread and a green salad.
