ZUCCHINI & FETA PIE |

Ingredients:
> 1 kg flour Ingredients for the filling :
> 6 zucchini, grated |
Direction for the pastry: | |
1 | Mix all ingredients to obtain a smooth dough. 2 | Let rest for at least 1 hour. 3 | Shape to a thickness of 5mm 2 pies. 4 | Put in pie pans. 5 | Prick with a fork. |

Directions for the filling: | |
1 | Preheat the oven to 180C. 2 | Salt the zucchini, to get the water out and drain them well. 3 | Heat the oil in a pan and sear the minced onion over medium heat until it's melted and transparent. 4 | Add the zucchini, mix it with the onion and sear a little longer. 5 | Add the fresh thyme leaves, the crumbled feta cheese and mix. Add lots of fresh pepper. 6 | Mix the half cream with the eggs. 7 | Transfer the zucchini mix into the pies. 8 | Pour the cream mixture on the zucchini. 9 | Bake 30-40 min until nicely colored. |
