TARTE FLAMBÉE WITH SMOKED SALMON AND ARUGULA

1 | Mix the ingredients for the dough and knead it by hand or in a stand mixer.
2 | Let the dough rise for a few hours (min 1 hour).
3 | Preheat the oven to 220 ° C (pizza function).
4 | Roll-out the dough with a rolling pin and cover with a thin layer of crème fraiche. You will probably make 3-4 tartes.
5 | Place a few strips of red onion and bake for 10 min (until the edges of the dough are nice and brown).
6 | Take out of the oven and garnish with the capers, the salmon, the arugula, freshly ground pepper and a few drops of lemon juice.
