TARTE FLAMBÉE WITH SMOKED SALMON AND ARUGULA

The dough (serves 4)  All levels

Ingredients for the dough:

> 300gr of flour
> 190ml of water
> 20gr of fresh yeast
> Salt

Ingredients for the recipe:

> 1 tbsp olive oil
> 2 jars of fresh cream
> Red onion cut into strips
> 350 gr smoked salmon, sliced
> A handful of fresh arugula
> 3 tbsp capers
> Fresh pepper/span>
> Lemon juice


Directions:

1 | Mix the ingredients for the dough and knead it by hand or in a stand mixer.

2 | Let the dough rise for a few hours (min 1 hour).

3 | Preheat the oven to 220 ° C (pizza function).

| Roll-out the dough with a rolling pin and cover with a thin layer of crème fraiche. You will probably make 3-4 tartes.

Place a few strips of red onion and bake for 10 min (until the edges of the dough are nice and brown).

Take out of the oven and garnish with the capers, the salmon, the arugula, freshly ground pepper and a few drops of lemon juice.
