LEEK PIE

 Ingredients for 2 pies All levels

Pastry ingredients:

> 1 kg flour
> 500 gr butter
>tbsp sunflower oil
> 20 dl water
> salt

Ingredients for the filling:

> 600 gr leeks (white parts only)
> 100 gr bacon 
>tbsp olive oil
> 3 eggs
> 400 ml half cream
> 100 gr grated Gruyère cheese
> 50 gr grated goat's cheese from Lignières
> Salt, pepper

Direction for the pastry:

1 | Mix all ingredients to obtain a smooth dough.

2 | Let rest for at least 1 hour.

3 | Shape to a thickness of 5mm 2 pies.

4 | Put in pie pans.

5 | Prick with a fork.

Directions for the filling:

1 | Preheat the oven to 180C.

2 | Wash the leeks and cut them in slices with a knife.

3 | Heat the oil in a pan and sear the leeks over medium heat until the leeks are melted and transparent.

4 | Sear the bacon in another pan so that they are well grilled.

5 | Add the bacon with the leeks. Season with salt and pepper.

| Mix the half cream with the eggs and the 2 grated cheese.

| Arrange the leeks in the pies.

| Pour the cream mixture on the leeks.

| Bake 30-40 min until nicely colored.

 Serve with a green salad.
