1 | Blanch the yolks with the sugar. 2 | Add the mascarpone and whisk to obtain a homogeneous mixture. 3 | Beat the egg whites and gently fold in to the yolk mixture. 4 | Dip the cookies in the coffee and dress alternating between the cookies and the cream.
