MY MOM’S ZUCCHINI BREAD

Serves  All levels

Ingredients:

> 3 eggs
> 1 cup neutral oil
> 2 cups shredded zucchini
> 1 cup brown sugar
> ¾ cups coconut sugar
> ¼ tsp baking powder
2 tsp baking soda
> 2 tsp vanilla
> 2 tsp cinnamon
> ¼ tsp fleur de sel
> 1 cup chopped nuts
> 2 cups flour

 

Directions:

1 | Beat the eggs, sugar and oil together until smooth

2 | Add the rest of the ingredients except for the nuts and zucchini and combine well.

3 | Add the nuts and zucchini and fold by hand.

| Bake at 180 C for an hour.
