Let's go hunting! | 11.16.2021

That's it, it's finally the return of the hunting season! You will surely have the opportunity to taste it traditionally in your favourite regional restaurant. Here, we leave the tradition aside to explore other, more modern horizons.
This cooking class is for anyone looking for new inspiration in the theme of venison. Together with chef Romain Vuilleumier we are developing a 3-course menu based on the theme of the forest and products from the Neuchâtel region. Different techniques will be unveiled to enrich your creativity on a theme heavy with tradition. Mushrooms, venison and pumpkin (for dessert) will be featured in this menu which is meant to be as beautiful as it is good! 

 

The Menu: 

- Starter: Sautéed mushrooms with forest scent, creamy porcini mushroom mousse with pine, seasonal berries.
- Dish: Venison fillet in gingerbread crust, red wine and coffee-chocolate reduced juice, seasonal vegetables and amber beer spätzli.
- Dessert: Creamed and caramelized pumpkin, roasted seeds and chocolate mousse.

 

A welcome drink will be offered to you by Grillette, Domain de Cressier. |
