Named after the 1st Duke of Wellington (probably), who died in 1852, the beef Wellington is a fillet of beef covered with a pastry or duxelles (mushroom paste), wrapped in ham and puff pastry and baked.

In this cooking class with Chef Thomas Mansfield, each participant will make an individual Wellington, including the puff pastry. The meal will be accompanied by a Madeira sauce, some Jura vegetables and a typical English seasonal dessert, a pear and almond crumble. All elements of the menu will be preapred by the participants alongside the chef. This menu perfectly combines flavors, generosity and tradition while keeping the cuisine modern and simple.
