Manuel Hotz embodies a contemporary Swiss cuisine that is refined, sensitive and deeply rooted in seasonal produce and local terroir.Originally from La Neuveville, he has made a name for himself in the Swiss gastronomic scene through his talent, precision and culinary vision, notably as a finalist in the prestigious Cuisinier d’Or competition. Together with his partner Cécile Hotz, a baker, he also passionately developed La Table de l’Ours in Prêles, before expanding their work into catering, private chef services and artisanal baking on the shores of Lake Biel.His cuisine stands out for its balance of creativity, modernity and authenticity. Through his dishes, Manuel Hotz elevates local ingredients with finesse, high standards and generosity, in a style that is both elegant and approachable.
