Leading the class: chef Francesca Amati, who will guide you step by step through a menu of stunning bites — tuna tataki, sea bream rolls, truffle parmesan siphon… 

Accessible techniques, results worthy of the most beautiful December tables.

On the menu:


- Beef tartare, apple compote, feta siphon and crunchy hazelnuts:
The perfect balance of boldness and freshness — a bite that kicks off the evening in style.:
- Confit squash, parmesan and truffle siphon:
Winter sweetness, creamy parmesan, the intoxicating scent of truffle. Winter luxury in a single bite
- Sea bream roll, dill yoghurt and green apple:

- Polenta, taleggio, walnuts and pears: Winter comfort reimagined: melting taleggio, crunchy walnuts and the subtle sweetness of pear.
- Tuna tataki, tuna sauce and taggiasca olives:
The showstopper — Japanese technique, Mediterranean soul. A bite that always makes an impression.
- Cannellini bean cream, mussels and saffron foam: Velvety, aromatic and deeply comforting — the sea meets winter in one elegant spoonful.
- Mini lemon tart: A bright, zesty finish — buttery pastry, sharp lemon cream, pure elegance in miniature.
