Leaf it to Danny A cooking class series celebrating 10 years of Les Laboratoires Culinaires, and the chefs who make taste shine across French-speaking Switzerland. For this edition, we welcome chef Danny Baker from La Luciole — one of Switzerland's most celebrated plant-based restaurants and proud holder of a Green Michelin Star. One of the most exciting culinary voices in the region, Danny brings an English-inspired menu that is entirely plant-based, proving that vegan cooking can be bold, comforting and technically brilliant all at once.
Expect classics reimagined, textures that surprise, and techniques that will change the way you think about cooking without animal products. This class is conducted in English.
The Menu:
- Welsh Rarebit Tart: A British pub classic elevated into an elegant starter — rich, savoury and deeply satisfying, reimagined through the lens of vegan cooking.
- Luciole Brioche with Pressed Mushroom and Peppercorn Sauce: The heart of the menu. A pillowy vegan brioche paired with beautifully pressed mushroom and a bold peppercorn sauce — a masterclass in texture and depth of flavour.
- Sticky Toffee Pudding: The ultimate British comfort dessert, made entirely plant-based without compromise. Dark, sweet, indulgent — and a revelation.
Throughout the class, Danny will guide you through the fundamentals of vegan cooking: how to work with textures, master plant-based substitutes, and apply refined techniques that elevate everyday ingredients into something truly memorable.
