In Levantine cuisine, legumes, grains, and seeds play a central role, showcased in many dishes for their richness in protein, flavor, and texture. All it takes is pairing them with seasonal vegetables, fresh herbs, fragrant spices, and a good drizzle of olive oil to create dishes that are as colorful as they are delicious.
During this warm and friendly cooking class, Chef Maya Joundi will introduce you to emblematic and generous recipes from the Levant, reimagined in a vegetarian version. She will share her love for simple ingredients, her culinary expertise, and the tips and tricks passed down through generations.

The menu :
- Mjadara: lentil and bulgur stew with caramelized onions
- Fatah: toasted flatbread with chickpeas, yogurt sauce, and toasted pine nuts
- Mouhamara: walnut, roasted pepper, and chili spread
- Winter Tzatziki: a seasonal twist on the classic
- Cheese and homemade zaatar Börek: crisp on the outside, melty inside
