Join us for a cooking class dedicated to the festive spirit.
Through a seasonal menu combining fine ingredients and refined techniques, you’ll discover how to elevate veal, trout, or celery into elegant and balanced dishes infused with the delicate aromas of truffle, fir, and winter citrus.

During this cooking class, you will learn precise and inspiring techniques: low-temperature cooking of the perfect egg, quick gravlax, reduced meat jus finished with butter, fruit confit, and assembling a millefeuille à la minute.
A complete workshop where every gesture highlights the beauty of the product and the harmony of textures.

On the menu:
- Amuse-bouche:
Shortcrust tartlet with celery and fresh truffle, perfect egg and truffle jus.
- Starter:
Quick trout gravlax, black radish, buckwheat sable and verbena vinaigrette gel.
- Main course:
Roasted veal fillet infused with fir, reduced morel jus and brown butter.
- Sides: Jerusalem artichoke gratin with brown butter and garlic, braised turnips, and silky vegetable purée.
- Dessert:
Bergamot millefeuille à la minute with candied quince and whipped mascarpone cream.

This cooking class is perfect for those wishing to explore a festive, modern, and poetic cuisine where technique meets the season.
In 2.5 hours, you’ll create a complete menu and then take part in a final workshop focused on setting an artistic and refined winter table — for a moment of sharing that’s as beautiful as it is delicious.
